PSA: You don’t need to eat sad, flavorless salads to boost your vegetable intake. “Winter produce can help you stay on track, and there are so many fun, delicious ways to get your greens—and reds and oranges,” says WW’s food director, Sherry Rujikarn.
- Lean into the jewel tones of in-season citrus and fresh pomegranate seeds. Try Endive-Citrus Salad with Walnuts.
- Think beyond broccoli and try Brussels sprouts, beets, kale, winter squash, collard greens, pumpkin, turnips, cabbage, and carrots. Try Kale Salad with Warm Bacon Dressing.
- Explore clever tricks like using applesauce and puréed ripe bananas to add natural sweetness and moisture to baked goods. Try Banana Snack Bread.
