Vanilla Blueberry Pancakes Recipe

Cooking spray
1 Weight Watchers Vanilla Smoothie mix packet
1/3 cup flour
1/8 tsp salt
1/8 tsp baking powder
1 large egg, beaten well
1/2 cup 1 % milk
1/2 cup blueberries, additional for garnish

Whisk together smoothie mix, flour, salt, and baking powder in a medium bowl. In a separate bowl whisk together egg, and milk. Add wet ingredients to dry and stir well to combine (batter will be a little lumpy). Coat a large nonstick skillet with cooking spray and preheat over medium-low heat. Pour batter into 4 even 1/4 cup sized pancakes. Sprinkle tops evenly with blueberries. Cook for 3-4 minutes per side or until set.
