After toasting the slices of French bread, simply process the cannellini beans, garlic, lemon juice, and water in a blender or food processor until everything is nice and smooth. Spread it on some toast, then top with fresh chopped tomatoes and a touch of basil for a pop of color and pretty presentation. You can use any leftover bean purée as a dip for raw veggies like carrots, celery, or radishes. Make a whole batch to stash in the fridge so you always have some on hand.

Ingredients

French bread

canned cannellini beans

15 oz, drained and rinsed

garlic clove(s)

2 medium clove(s), minced

fresh lemon juice

water

paprika

1 large, coarsely chopped

Instructions

  1. Preheat oven to 400°F.
  2. Toast bread in oven for 8 to 10 minutes or until lightly browned.
  3. Purée beans with garlic, lemon juice and water until smooth. Adjust seasonings to taste.
  4. Spread purée on toast. Top each with a few pieces of tomato, and garnish with basil leaves.
