White Bean Bruschetta

Perfect as an appetizer, this delicious bean bruschetta is super-easy to make. Use any leftover puree as a dip for raw veggies like carrots, celery or radishes.

canned cannellini beans15 oz, drained and rinsed
garlic clove(s)2 clove(s), medium, minced
fresh lemon juice½ tsp
paprika⅛ tsp, or to taste
table salt⅛ tsp, or to taste
black pepper⅛ tsp, or to taste
fresh tomato(es)1 large, coarsely chopped
basil2 Tbsp, for garnish
- Preheat oven to 400°F.
- Toast bread in oven for 8 to 10 minutes or until lightly browned.
- Purée beans with garlic, lemon juice and water until smooth. Adjust seasonings to taste.
- Spread purée on toast. Top each with a few pieces of tomato, and garnish with basil leaves.
