uncooked ground turkey dark meat24 oz
fresh apple(s)½ medium, cored and roughly chopped
mango chutney2 Tbsp
uncooked scallion(s)1 medium, white and green parts roughly chopped
garlic clove(s)2 clove(s), medium, grated on a Microplane
cilantro¼ cup(s), fresh leaves
soy sauce1 Tbsp
curry powder½ tsp
ground chipotle chili½ tsp
sea salt1 tsp
olive oil cooking spray4 spray(s)
ground chipotle chili1 tsp
- Place the turkey in a large bowl, cover with a dish towel, and let come to room temperature while you prep the rest of the ingredients.
- In a food processor, combine the apple, mango chutney, scallion, garlic, cilantro, soy sauce, curry powder, chipotle , and salt and process until smooth. Add the mixture to the turkey and mix thoroughly to combine. Divide the mixture into four equal portions and form each into a loose ball. Pat lightly to flatten the meat into burgers about 3/4 inch thick.
- Heat a large, heavy skillet, preferably cast-iron, over medium-high heat. Spray with a thin layer of oil and add the burgers. Cook until nicely browned on the bottom, 4 to 5 minutes, then flip the burgers, reduce the heat to medium-low, cover the pan, and cook for about 6 minutes, until browned on the bottom and cooked through. Remove from the pan and serve.
- While the burgers are cooking, place the split pretzel buns on the grill cut side down to toast them (or toast them in a toaster). Remove the buns from the grill, sandwich the burgers into the buns, and add your choice of condiments.
