- Heat the oil in a large nonstick saucepan over medium-high heat. Add the onion and garlic and cook, stirring frequently, until translucent, 3–5 minutes. Add the sausage and cook, breaking up the sausage with a wooden spoon, until browned, about 8 minutes.
- Add the sauerkraut and broth; bring to a boil. Reduce the heat and simmer, partially covered, until the sausage is cooked through, about 20 minutes. Yields generous 1 1/2 cups per serving.
