uncooked sweet potato(es)

1 pound(s), 1/2 pound each, peeled and cut into 1/2 x 4-inch sticks

olive oil

2 tsp

chipotle chili powder

1 tsp

ground turmeric

1 tsp

table salt

¾ tsp

sugar

Instructions

  1. Combine potatoes with enough cold water to cover in large bowl. Soak at least 30 minutes or up to 1 hour; drain.
  2. Meanwhile, preheat oven to 425°F. Spray large nonstick baking sheet with nonstick spray.
  3. Arrange potatoes on prepared baking sheet close together. Drizzle with oil and turn until coated evenly.
  4. Stir together chile powder, turmeric, salt, and sugar in cup. Sprinkle half of spice mixture over potatoes; turn until coated evenly. Spread potatoes to form even layer. Bake, turning once or twice, until tender on inside and crisp on outside, about 30 minutes.
  5. Per serving: 1/2 potato
Notes
For bolder tasting fries, substitute a small amount of cayenne for the chiipotle chile powder and 1 teaspoon garlic powder for the turmeric.
