Seafood is a common ingredient in traditional Spanish tapas. Serve this quick and simple shrimp dish hot or at room temperature.

olive oil

1 Tbsp

garlic clove(s)

4 clove(s), medium, minced

uncooked shrimp

1 pound(s), 24 large, peeled and deveined

dried oregano

¾ tsp

crushed red pepper flakes

tsp, or to taste

  1. Heat a very large nonstick skillet over medium heat. Swirl in the oil, then add the garlic. Sauté until softened, about 1 minute. Increase the heat to medium-high and add the shrimp, oregano, and crushed pepper; sauté, stirring constantly, until the shrimp are just opaque, about 2 minutes. Yields 3 shrimp per serving.

You can make this dish a few hours ahead and refrigerate it until ready to serve. Remove from the refrigerator and bring to room temperature 30 minutes before serving. To devein shrimp, cut a shallow slit down the back of the peeled shrimp with a small sharp knife and pull out the dark vein. Rinse the shrimp briefly under cold running water and pat dry with paper towels before cooking.
