Spaghetti Carbonara (Everyday Delicious)

Ingredients

uncooked whole-wheat spaghetti

½ pound(s)

uncooked bacon

3 slice(s), cut into 1-inch pieces

garlic clove(s)

1 medium clove(s), minced

egg(s)

1 large

egg white(s)

1 large

grated Parmesan cheese

cup(s)

table salt

½ tsp

black pepper

¼ tsp, freshly ground

Instructions

  1. Cook spaghetti according to package directions. Drain and keep warm.
  2. Meanwhile, cook bacon in large nonstick skillet over medium heat until crisp. Add garlic and cook, stirring constantly, until fragrant, 30 seconds.
  3. Whisk together egg and egg white in small bowl.
  4. Add spaghetti to skillet and toss well to combine. Remove skillet from heat. Add eggs, Parmesan, salt, and pepper and toss to coat. Serve at once.
  5. Per serving (1 cup)
Notes
Toss a salad of romaine, red onion, and plum tomatoes with olive oil, red-wine vinegar, dried oregano, and salt and pepper (1 teaspoon olive oil per serving will increase the SmartPoints by 1).
