This roasted cauliflower recipe couldn't be easier to make and requires just 8 ingredients. The cauliflower is simply seasoned with some salt and pepper and then cooks away in the oven until it's well browned and tender. We love how much sweetness you can get out of the cauliflower just by roasting it. Fresh parsley, lemon zest, and chopped garlic are tossed with the hot cauliflower for added brightness and citrusy flavor. It's a delicious side dish that will any complement chicken, fish, or pork entrée. For a fancier presentation, you can also cut your cauliflower into several thick “steaks” instead of florets before roasting.

Cauliflower

1 head(s), large, cut into 1-in florets

Cooking spray

Kosher salt

Fresh parsley

Lemon zest

Instructions

  1. Preheat oven to 425°F. Line a baking pan with parchment paper.
  2. Place cauliflower on prepared pan and coat with cooking spray; season with salt and pepper. Bake, stirring once halfway throughcooking, until well-browned, 30-35 minutes.
  3. Combine parsley, lemon zest and garlic in a small bowl; toss with cauliflower just before serving.
