cooked lean and trimmed beef rump roast

2 large, each cut into 8 crosswise slices

arugula

Instructions

  1. Stir together mayonnaise, horseradish, and pepper in small bowl. Spread about 1 1/2 teaspoons of mayonnaise mixture on each slice of toast.
  2. Top each of 4 slices of toast with 2 slices roast beef, 4 tomato slices, and 1/2 cup arugula. Cover with remaining slices of toast.
  3. Per serving: 1 sandwich
Notes
