This colorful, crunchy slaw is great either alongside or on top of tacos. You can also make it as a side for any barbecue, picnic, or outdoor feast. It takes only 15 minutes to put together, and all you need is lime juice, salt, red onions, red cabbage, and lots of fresh cilantro. All you have to do is scrunch the ingredients together in a bowl with your hands—it really doesn't get much easier than that. The best part is you can enjoy it immediately or let it hang out in the fridge for 2 days, which makes this dish super-convenient to have at the ready.

Ingredients

Fresh lime juice

¼ cup(s), or to taste

Kosher salt

½ tsp, or to taste

Red onion

1 medium, thinly sliced in half moons

Red cabbage

6 cup(s), very thinly sliced (about 1 lb)

Cilantro

12 sprig(s), leaves only, finely chopped ( or to taste)

Instructions

  1. Place lime juice, salt, onion and cabbage in a large bowl; use your hands to scrunch everything together until cabbage is slightly softened. Stir in cilantro; serve immediately or cover and refrigerate for up to 2 days before serving (season to taste with more lime and/or salt before serving).
