Nobody will ever guess that canned chickpeas are the secret ingredient to this easy dessert. Enjoy the cookie dough bites on their own, scooped into mini phyllo crusts, or served over chopped banana and strawberries. They're a fun, no-bake way to get a protein boost and will remind you of making homemade cookies. Personalize the flavor of your cookie dough by swapping in other types of chocolate chips, chopped dried fruit, or crumbled cookies.

Canned chickpeas (garbanzo beans)

Instructions

  1. Puree chickpeas and water in a food processor. Add sugar, salt, baking soda, and protein powder; pulse to combine. Add flour and chocolate chips; pulse to combine. Refrigerate up to 4 days.
  2. Serving size: about 1/2 cup

Notes

Concerned about the safety of eating uncooked flour? Microwave flour to 165°F to kill harmful bacteria that may be present. Heat 1 cup flour in 20 second intervals until it reaches 165°F when checked with an instant read thermometer.
