Stir-fries make for an easy, convenient weeknight dinner because they can be ready to go so quickly. It's important to have all the veggies and sauces chopped up and measured since the ingredients take only minutes to cook and you have to add them in stages. This particular stir-fry features lean ham, bell peppers, scallions, carrots, zucchini, ginger, and garlic, as well as a quick sauce that includes soy sauce, rice vinegar, sesame oil, and sambal oelek. You'll love the hearty yet healthy meat and veggie combo as well as the spicy, rich, and tangy sauce that brings it all together.

1 large, beaten

Cooked lean ham

½ cup(s), diced

Uncooked bell pepper(s)

1 item(s), medium, diced

Uncooked scallion(s)

3 medium, chopped plus additional for garnish

Cooked carrot(s)

½ cup(s), defrosted

Uncooked zucchini

½ cup(s), diced

Minced garlic

1 Tbsp

Minced ginger

1½ tsp

Skinny Pasta Konjac noodles, rice shaped (WW endorsed)

1 bag(s), drained and rinsed

Soy sauce

4 tsp

Rice vinegar

1 tsp

Sesame oil

½ Tbsp

Sambal oelek

½ tsp, or to taste


  1. Coat a large nonstick skillet with cooking spray and heat over medium heat.
  2. Add egg and swirl to coat bottom of pan.
  3. Cook for 2-3 minutes or until cooked through.
  4. Remove to a plate and chop into small pieces.
  5. Wipe pan clean and spray lightly with cooking spray.
  6. Add ham, pepper, scallions, carrots, zucchini, garlic, and ginger to pan.
  7. Cook on medium-high heat for 3-5 minutes or until veggies are crisp tender.
  8. Stir in Skinny Pasta rice, soy sauce, rice vinegar, sesame oil, and sambal oelek and cook for an additional 2-3 minutes for flavors to meld.
  9. Stir in chopped egg and serve garnished with additional scallions.
