Puttanesca sauce is a spicy blend of tomatoes, onions, capers, black olives, oregano and garlic cooked together in olive oil.
Ingredients

uncooked spaghetti

8 oz

olive oil

1 Tbsp

garlic clove(s)

4 clove(s), medium, minced

canned diced tomatoes

14½ oz, undrained

olive(s)

8 medium, Kalamata variety, pitted and chopped

canned tomato paste

¼ cup(s)

capers

1 Tbsp

crushed red pepper flakes

¼ tsp

grated Parmesan cheese

½ cup(s), or asiago

basil

¼ cup(s), sliced

Instructions

  1. Cook pasta according to package directions, omitting salt and fat. Drain, reserving 1 tablespoon pasta water.
  2. Meanwhile, heat oil in a medium saucepan over medium heat. Add garlic; cook 3 minutes, stirring occasionally. Add tomatoes and next four ingredients; bring to a simmer. Simmer, uncovered, 15 minutes or until sauce is thick, stirring occasionally.
  3. Combine pasta, sauce and reserved 1 tablespoon pasta water. Top with cheese and basil. Yield: 4 servings (serving size: 1 cup).
