Parmesan-Pepper Green Bean Fries

Make sure your cheese is finely grated for the best results. Also make sure you coat the green beans lightly but evenly for maximum crispness.


egg white(s)

2 large, at room temperature


2 Tbsp

grated Parmesan cheese

1 cup(s), preferably Parmigiano-Reggiano (about 3 1/2 oz)

black pepper

1 tsp, freshly ground, or to taste

uncooked string beans

12 oz, trimmed (about 60)


  1. Preheat oven to 425°F. Line a large rimmed baking sheet with a silicone baking mat or parchment paper.
  2. In a shallow bowl, whisk together egg whites with water until foamy. In another shallow bowl, combine cheese and pepper.
  3. Dip each string bean into egg white mixture; gently shake off any excess. Next, dip in cheese mixture and turn to coat; place on prepared pan and repeat with remaining ingredients (make sure fries do not touch or overlap on pan, and rewhip egg white mixture a few times as you prep the fries).
  4. Bake until cheese has melted and browned a little, about 8 minutes. Transfer pan to a wire rack and cool for a few minutes.
  5. Serving size: 10 fries
