This wrap tastes like a delicious yet portable nicoise salad, with tuna, tangy capers, fresh tomatoes and asparagus, and hard-boiled eggs. It takes just 5 minutes to make, and if you blanch and cook the asparagus and eggs beforehand and store them in the fridge, you can assemble a wrap multiple times throughout the week for lunch. It's also versatile enough for you to use any protein or vegetables you have on hand. Try with chicken, green beans, red peppers, chopped olives...it's a great way to use up what you've got in the fridge.

Flatbread

Canned tuna packed in water

3 oz

Asparagus

4 spear(s), medium, blanched, chopped

Cherry tomatoes

4 cup(s), cut in quarters

Capers

1 tsp

Hard boiled egg

1 item(s), large, cut in slices

Olive oil

1 tsp

Lemon

½ item(s), medium, juiced

Dijon mustard

Instructions

  1. In a bowl, combine the asparagus, capers, tomatoes, tuna, lemon juice, mustard, and olive oil.
  2. Season with salt and pepper if desired.
  3. To assemble the wrap, place the salad on the flatbread towards the rounded end, then arrange the egg slices evenly over the salad.
  4. Roll up, beginning at rounded end, and cut in half.
