This seemingly simple salad is a must for everyone's collection. It’s made from traditional salad ingredients, but some of the cherry tomatoes are blended into the homemade dressing for a flavorful twist. Plus, it is ready in just 10 minutes, making it an ideal side dish for harried weeknight dinners. You can dress it up, if you like, by adding in toasted walnuts for crunch, dried cranberries for sweetness, cannellini beans for heft, and crumbled feta or goat cheese for richness. Or, you can top it with grilled chicken, sautéed shrimp, or roasted fish to make it the main dish.

Red wine vinegar

Cherry tomatoes

1½ cup(s), or grape tomatoes, sliced in half, divided

Fresh parsley

¼ cup(s), fresh

Garlic

1 clove(s), minced

¼ tsp, freshly ground

Mixed greens

Instructions

  1. Place all ingredients, except 1 cup of tomatoes and mixed greens, in a blender or mini-chopper; blend thoroughly.
  2. Place greens and remaining 1 cup of tomatoes in a medium bowl and toss with dressing. Yields about 1 1/2 cups of mixed greens and 2 tablespoons of dressing per serving.
