Ice cream sandwiches go mini with these sweet little treats. They’ll be a hit at your next warm weather gathering. This recipe also shows that you don’t need many ingredients to have a big impact, and it’s a dessert that you can customize to suit your cravings. This version uses mint extract, but you could substitute vanilla, coffee, or hazelnut extract, if you like. Or use any flavor of ice cream that you like. Some of the chocolate wafers are crushed and mixed into the vanilla ice cream, adding some texture once you bite in. If you’d like to double this recipe, make one batch at a time so the ice cream won’t get too soft.

Instructions

  1. Crush 4 wafers with a rolling pin or in a plastic bag; place in a small bowl. Add ice cream and mint extract; stir to combine. Spoon 2 tablespoons ice cream mixture onto each of 12 wafers; top each with a second wafer. Freeze until ready to serve. Yields 1 sandwich per serving.
