Maple and lemon complement the flavor of most fruit, so you can use whatever is in season to make these parfaits. These parfaits can be made up to 12 hours ahead of time, but you should hold out the granola until just before you’re ready to eat so that it stays crunchy. You’ll need half of a lemon to yield enough zest and juice for this recipe.

Ingredients

Pineapple

2 cup(s), cubed (option: swap some papaya for some of the pineapple)

Kiwifruit

2 medium, chopped

Mango

1 medium, cubed

Lemon zest

1 tsp, grated

Fresh lemon juice

1 Tbsp

Plain fat free Greek yogurt

2 cup(s)

Maple syrup

2 tsp

Low-fat granola

4 Tbsp

Instructions

  1. Stir pineapple, kiwi, mango, lemon zest, and lemon juice together in medium bowl. Combine yogurt and maple syrup in another medium bowl.
  2. Spoon ¼ cup yogurt into each of 4 parfait glasses or 4 small lidded jars (such as mason jars). Top each with ½ cup fruit mixture. Repeat layering once. Serve at once, or refrigerate overnight or up to 12 hours. Sprinkle parfaits evenly with granola before serving.
  3. Serving size: 1 parfait
