WW Lemon-Poppy Seed Mini Muffins
Enjoy these mini cupcakes warm straight from the oven, or dress them up with whipped topping, berries, and lemon zest. Or you can make a glaze by mixing 1/4 cup powdered sugar with 1/2 tbsp water until smooth and then drizzle it over the cooled muffin tops.

- Preheat oven to 350°F. Lightly coat 6 holes of a mini muffin pan with nonstick cooking spray (or use cupcake liners or a nonstick or silicone pan).
- In a small bowl, stir together all ingredients into a smooth batter. Evenly divide batter among prepared muffin holes. Bake until a toothpick inserted into the center of a muffin comes out clean, 9 to 10 minutes. Allow to cool before serving.
