High-Protein Beef and Banana Bowl

Considering the similarities between bananas and their starchier cousins, yellow plantains, it made sense to go in a south American direction with the flavors of this protein-packed bowl. Feel free to serve this over a bed of rice or cauliflower rice and top it off with pickled peppers, cilantro, scallions, or hot sauce.


Ingredients
Olive oil cooking spray

Banana
2 medium
Uncooked ground beef sirloin 90% lean
12 oz
Ground cumin
¾ tsp
Garlic powder
¾ tsp
Kosher salt
½ tsp
Canned black beans
1 can(s), drained
Honey
1 tsp
Lime

Instructions

Spray the bananas on both sides with the olive oil. Heat a large nonstick skillet on medium-high. Add the bananas and cook 3 to 4 minutes, until browned on both sides. Transfer to a plate.

Wipe out the skillet and spray with olive oil. Heat on medium. Add the beef and season it with the cumin, garlic, and salt. Cook 4 minutes, until browned, breaking up with a wooden spoon or spatula.

Stir the beans into the beef and cook until beans are heated through. Divide beef and bean mixture between two bowls. Add the bananas. Drizzle with the honey and squeeze lime on top.

Serve with optional garnishes like pickled jalapenos, cilantro, scallions, or hot sauce.
