Ingredients

Fresh parsley

¼ cup(s), finely minced

Olive oil

1 tsp

Garlic clove(s)

1 medium clove(s), finely minced

Sea salt

½ tsp

Uncooked bell pepper(s)

2 item(s), medium, green variety, cut into 8 chunks each

Grape tomatoes

12 medium

Cremini mushroom(s)

12 medium, (baby bella), wiped clean, stems trimmed

Instructions

  1. Preheat grill to high.
  2. In a medium bowl, combine parsley, oil, garlic, and salt; add vegetables and toss to coat. Thread vegetables onto 4 long metal skewers.
  3. Grill, turning once, until tender and charred, about 6-10 minutes, depending on desired doneness.
  4. Serving size: 1 kebab
