Fresh parsley

Instructions

  1. Preheat grill to high or prepare hot fire.
  2. Mix together parsley, garlic, oil, salt, and black pepper in medium bowl. Add bell peppers, tomatoes, and mushrooms and toss until coated evenly. Thread vegetables onto 4 long metal skewers, dividing evenly.
  3. Place skewers on grill rack and grill, turning kebabs occasionally, until vegetables are tender and lightly charred, about 10 minutes.
  4. Per serving: 1 kebab

Notes
