Ingredients

Unsalted butter

2 Tbsp

Panko breadcrumbs

¾ cup(s)

Dehydrated onion flakes

2 Tbsp

Table salt

¾ tsp

Olive oil

1 tsp

Uncooked string beans

1½ pound(s), trimmed and halved crosswise

Fresh mushroom(s)

1 pound(s), small size, white variety, thinly sliced

Instructions

  1. To make crumb topping, melt 1 tablespoon of butter in large heavy nonstick skillet over medium-low heat; add panko, onion flakes, and ¼ teaspoon of salt. Increase heat to medium and cook, stirring often, until crumbs are lightly toasted, about 3 minutes. Transfer crumb mixture to plate and set aside. Wipe skillet clean.
  2. Heat oil and remaining 1 tablespoon butter in skillet over medium-high heat until butter is melted. Add green beans, mushrooms, and remaining ½ teaspoon salt; cook, stirring, until mushrooms are lightly browned and green beans are crisp-tender, about 5 minutes. Sprinkle with reserved crumb topping.
  3. Per serving: 1 cup

Notes

Turn this side dish into a tempting main dish by tossing the green bean mixture with cooked whole wheat penne and sprinkling each serving with the crumb mixture. One cup of cooked whole wheat penne for each serving will up the SmartPoints value by 4.
