This salad feels like pure California cafe food - lots of crunchy garden veggies like cucumbers, onions and tomatoes plus smooth, rich avocado, all tossed with bright window box-grown herbs like basil, mint and cilantro. With toasted pumpkin seeds and a little help from our signature Light String Cheese, you’ll satisfy your desire for freshness and get a full meal in a single bowl. Or serve this as a substantial side salad to a dinner of burgers or grilled sandwiches of your liking. With all the veggies and bold herbs included in the salad, it requires little else. A simple dressing of olive and lemon tie all the flavors together.

Ingredients

Grape tomatoes

4 medium

WW Light part-skim mozzarella string cheese

1 piece(s)

Uncooked red onion(s)

¼ small, sliced thin

Cucumber(s)

½ medium, sliced into half moons

Lemon(s)

1 item(s), juiced

Olive oil

1 tsp, extra virgin

Table salt

¼ tsp, or to taste

Roasted pumpkin seed kernels

1½ Tbsp

Basil

1 leaf/leaves

Fresh mint leaves

1 Tbsp, (1 leaf)

Cilantro

¼ tsp, dried

California (Hass) avocado

¼ item(s), without skin and seed

Instructions

  1. Cut tomato into halves and thinly slice the red onion.
  2. Cut cucumber in half long ways and then slice into half moons.
  3. Toss the veggies with the EVOO, lemon juice, Weight Watchers String Cheese and a dash of salt.
  4. Mix in the herbs then gently toss in avocado—don’t mush it!
