Uncooked pork tenderloin

Five-spice powder

Plum(s)

4 item(s), medium, ripe, pitted and thinly sliced

Low sodium soy sauce

1 Tbsp

Rice vinegar

1 Tbsp, unseasoned

Ginger root

½ tsp, grated, peeled fresh

Instructions

  1. Preheat oven to 400°F. Spray medium roasting pan with nonstick spray.
  2. Rub pork all over with five-spice powder and salt.
  3. Heat oil in large skillet over medium-high heat. Add pork and cook, turning occasionally, until browned on all sides, about 8 minutes. Transfer to prepared baking pan and bake until instant-read thermometer inserted into center of pork registers 145°F, about 20 minutes. (Do not wash skillet.) Let pork rest 5 minutes, then cut into 12 slices.
  4. When pork is almost done, add plums, soy sauce, vinegar, and ginger to same skillet and set over medium heat. Cook, stirring often until plums are tender, about 4 minutes. Serve pork with plums.
  5. Per serving (3 slices pork and about 1/3 cup plums)

Notes

Instead of plums, you can use 2 pitted and sliced nectarines or peaches in this recipe.
