Ingredients

Sprouted grain bread

1 slice(s)

Heirloom tomato

1 medium

Radishes

4 small, scrubbed and trimmed

Garlic

1 clove(s), optional

1% low fat cottage cheese

½ cup(s)

Olive oil

1 tsp

Flaky salt

1 pinch(es), or to taste

Black pepper

1 pinch(es), or to taste

Dill

2 tsp, tarragon, chives, and/or mint

Serrano chile pepper

½ item(s), thinly sliced

Lemon

½ item(s), large, zested and juiced

Instructions

  1. Place bread to toast and meanwhile, thinly slice your tomato and radishes. When the toast is warm and crisp, rub with garlic clove if using, then spoon cottage cheese over top. Layer with tomato and a pile of thinly sliced radishes before drizzling with olive oil and seasoning with salt and pepper. (I love to add additional flavors with fresh herbs, serrano chile slices if you like it spicy, and a little lemon zest and juice to bring up the zing factor! All optional, all wonderful alone or in combination!)
