Cold Poached Salmon with Caper-Mayonnaise

Here's a classic preparation of poached salmon with a terrific lemon-dill-caper-mayonnaise. Serve it at a casual dinner party or an upscale brunch.

Ingredients

Water

2 cup(s)

White wine

5 fl oz

Fresh lemon juice

2 Tbsp

Dill

1 Tbsp, fresh, chopped

Table salt

½ tsp

Uncooked wild Atlantic salmon fillet

1 pound(s), washed and patted dry*SAUCE

Reduced calorie mayonnaise

¼ cup(s)

Lemon

1 item(s), large, zested and juiced

Dill

2 Tbsp, fresh, minced

Capers

1½ Tbsp, small size

Black pepper

½ tsp, freshly ground, or to taste

Instructions

  1. In a large pot, bring first five ingredients to a boil over high heat. Add fish to pot and reduce heat to low; cover and simmer gently until center of fish is no longer translucent, about 8 to 10 minutes. Remove fish with a slotted spatula to a serving plate and allow to cool before chilling in refrigerator.
  2. Meanwhile, in a small bowl, stir together sauce ingredients; set aside.
  3. Remove chilled fish from refrigerator and spoon sauce over top; garnish with dill sprigs, if desired. Yields about 3 1/2 ounces fish and 2 tablespoons sauce per serving.

Notes

*Leave the skin on so it's easier to cook the fish; remove the skin when serving.
