Ingredients

Plain lowfat yogurt

1½ cup(s)

Cucumber(s)

1 large, peeled, halved, seeded, and cut into chunks

Uncooked scallion(s)

4 medium, coarsely chopped

Dill

3 Tbsp, chopped fresh

Fat free skim milk

1 cup(s)

Table salt

½ tsp

Black pepper

¼ tsp

Orange bell pepper

4 Tbsp, chopped, or yellow variety, finely chopped

Instructions

  1. Combine yogurt, cucumber, scallions, and 2 tablespoons of dill in blender; process until smooth. Pour into large bowl; stir in milk, salt, and black pepper.
  2. Ladle soup evenly into 4 bowls. Top each serving with 1 tablespoon bell pepper and sprinkle with remaining 1 tablespoon dill.
  3. Per serving: 1 1/4 cups

Notes

No need to cook to enjoy a light and tasty soup. Be sure to use very cold yogurt and milk if planning to serve this summertime refresher right away. Keep the soup cold longer by serving it in chilled bowls.
