Cold Cucumber Soup (Family Meals)
Plain lowfat yogurt
1 large, peeled, halved, seeded, and cut into chunks
4 medium, coarsely chopped
3 Tbsp, chopped fresh
Fat free skim milk
Orange bell pepper
4 Tbsp, chopped, or yellow variety, finely chopped
- Combine yogurt, cucumber, scallions, and 2 tablespoons of dill in blender; process until smooth. Pour into large bowl; stir in milk, salt, and black pepper.
- Ladle soup evenly into 4 bowls. Top each serving with 1 tablespoon bell pepper and sprinkle with remaining 1 tablespoon dill.
- Per serving: 1 1/4 cups
