Chocolate fudge cookie bites

Unsweetened cocoa powder gives these chocolatey bite-sized cookies deep, rich flavor while powdered sugar sweetens them without making them overly sweet. For a sweet and salty variation, sprinkle the hot cookies with a flaky finishing salt. If the dough is too sticky to work with, refrigerate it for about an hour or until it is firmed up. Rather than baking the entire batch of cookies at once, refrigerate or freeze some of the dough to bake another batch or two at a moment’s notice. If you make the cookies all at once, let them completely cool before storing them in an airtight container.

- Preheat oven to 375°F. Spray two nonstick baking sheets with nonstick spray or line regular baking sheets with parchment paper.
- Whisk together flour, baking powder, and salt in small bowl.
- With electric mixer on medium speed, beat granulated sugar, cocoa, and butter in large bowl until creamy. Beat in applesauce and vanilla. Reduce mixer speed to low and stir in flour mixture just until blended.
- Rough dough into 40 marble-size balls and place 1 inch apart on prepared baking sheets. Bake until set, about 8 minutes. Let cookies cool on baking sheets about 1 minute. Transfer cookies to wire racks and let cool completely; dust with confectioners' sugar.
