There’s something magical that happens when chili powder and fresh lime juice are used to season grilled corn—the combination of the two are such a wonderful substitute for butter. Here, we’ve kept the recipe simple to make it an easy grilled vegetable to cook on busy weeknights. With the exception of turning the corn halfway through cooking, the cobs won’t need much attention and will char best when left mostly undisturbed. But, on those evening when you have little more time, try removing the kernels from the cobs and tossing with them with grape tomatoes, cilantro and some jalapeño for an alternative side dish or relish for grilled chicken, meat or fish.

Cooking spray

Corn on the cob

4 ear(s), medium, husks and silks removed

Fresh lime juice

2 Tbsp

Lime zest

1 tsp

Chili powder

1 tsp

Table salt

1 tsp

Instructions

  1. Preheat grill to medium. Lightly coat corn with cooking spray.
  2. In a cup, stir together lime juice and zest, chili powder and salt; brush over corn.
  3. Grill corn until tender and lightly charred, turning once or twice, about 10 minutes. Yields 1 piece per serving.
