If you’re looking for an appetizer your guests will adore, then look no-further than this four ingredient hors d’oeuvre. Because cherry tomatoes are among the few supermarket produce items that have a consistent flavor and quality across every season, you can serve it year round. The tomatoes should be able to stand upright. If not, cut a thin slice of tomato off at the stem-end, so there is a flat surface for them to stand on. If blue cheese is too strong for your taste, try feta instead. Baby basil leaves or chopped green onions make good substitutes for the chives.

Ingredients

Cherry tomatoes

24 medium, stems removed

Blue cheese

½ cup(s), crumbled, not packed, crumbled

Crisp cooked bacon

4 slice(s), cut or crumbled into small pieces

Chives

1 Tbsp, fresh, chopped

Instructions

  1. Cut off tops of tomatoes. With melon baller or tip of grapefruit spoon, remove seeds and discard. Fill each tomato with about 1 tsp cheese, mounding it slightly. Top evenly with bacon and sprinkle with chives.
  2. Serving size: 2 stuffed tomatoes
