Ingredients

Cajun seasoning

2 tsp

paprika

1 tsp

uncooked center loin pork chop

16 oz, trimmed, 4 (4-ounce) chops

rum

1 fl oz, dark variety, (2 tablespoons)

packed brown sugar

4 tsp

pineapple

1½ cup(s), chopped fresh

plum tomato(es)

1 medium, diced

uncooked red onion(s)

¼ small, chopped

cilantro

¼ cup(s), coarsely chopped fresh

jalapeño pepper(s)

1 tsp, chopped

table salt

1 pinch

cooking spray

1 spray(s)

Instructions

  1. Stir together Cajun seasoning and paprika in small bowl. Rub pork chops all over with spice mixture.
  2. Spray ridged grill pan with nonstick spray and set over medium-high heat. Add pork chops and cook, turning once, until instant-read thermometer inserted into sides of chops registers 145°F, 6–8 minutes.
  3. Meanwhile, combine rum and brown sugar in medium bowl and stir until sugar dissolves. Add pineapple, tomato, onion, cilantro, jalapeño, and salt and stir gently to combine. Serve pork with salsa.
  4. Per serving: 1 pork chop and 1/2 cup salsa

Notes

To save time, buy fresh pineapple already trimmed, cored, and sliced. You can find it in plastic containers in the refrigerated section of the produce department.
