The first meal of the day should never be boring, so we created this protein-packed refried bean-and-scrambled egg pizza inspired by your favorite taco stand breakfast burrito. Substitute a whole-wheat tortilla for the flatbread if you wish, and if you want to eat this out of hand, just put the salsa, onion, cilantro and cheese on top and fold it over to eat. This recipe is a great opportunity to add another helping of vegetables to the start of your day too, consider adding bell pepper strips, tomatoes, corn, or wilted greens (or all of them) to the mix.

Flatbread

Fat free refried beans

Egg

2 item(s), large, scrambled

Chipotle chili powder

¼ tsp

Salsa verde

¼ cup(s)

Cilantro

¼ cup(s), chopped

Uncooked onion

2 Tbsp, chopped

Shredded fat free Cheddar cheese

½ cup(s)

Instructions

  1. Preheat the oven to 350. Bake the flatbread on a baking sheet for 3 minutes, until barely crispy. Remove from the oven and allow to cool.
  2. Meanwhile, combine the refried beans with the chipotle powder. Spread the bean mixture on the flatbread evenly, then top with the eggs and then the cheddar cheese.
  3. Return to the oven and bake 6-8 minutes until the cheese is melted.
  4. Drizzle the flatbread pizza with salsa verde and chopped cilantro and onions. Serve immediately.
