Cook the turkey bacon up to several hours ahead and drain on paper towels. When ready to use, microwave on High just until heated through, about 30 seconds.

Instructions

  1. Stir together the mayonnaise and pesto in a small bowl.
  2. Spread the mayonnaise mixture evenly on 2 slices of the bread. Layer the bread evenly with the arugula, avocado, tomato, and bacon. Cover the sandwiches with the remaining slices of bread. Cut each sandwich in half. Yields 1 sandwich per serving.
