This traditional Argentinian salad combines hearts of palm with avocado and tomato, all tossed with a fresh lime-cilantro dressing. It comes together in 15 minutes and couldn't be easier to make. All you need is one bowl to make it too. The dressing is made with some water, fresh lime juice, olive oil, salt, pepper, sliced scallions, and chopped cilantro. It can be used as a dressing for other salads or even a sauce for grilled meats and fish. To the dressing, add the drained hearts of palm, tomatoes, and avocado, toss them all together, and your crunchy, colorful salad is ready to go.

Ingredients

Water

3 Tbsp

Fresh lime juice

2 Tbsp

Olive oil

1½ Tbsp, extra virgin

Table salt

¼ tsp

Black pepper

¼ tsp, freshly ground

Scallions

3 Tbsp, sliced

Cilantro

2 Tbsp, fresh, chopped

Hearts of palm

14 oz, canned, drained, sliced 1/2-in thick

Tomato

2 small, roughly chopped

Avocado

1 medium, uncooked, Hass, sliced

Instructions

  1. In a serving bowl, combine water, lime juice, oil, salt and pepper; stir in scallions and cilantro.
  2. Add hearts of palm, tomatoes and avocado to bowl; gently toss to coat. Yields about 1 1/4 cups per serving.
