1 large, red variety, unpeeled and cut into matchstick strips

1 large, green variety, unpeeled and cut into matchstick strips

fresh lemon juice

extra virgin olive oil

Instructions

  1. Put apples in serving bowl and sprinkle with lemon juice; toss until coated evenly. Add carrots, chives, oil, sugar, salt, and pepper; toss until mixed well. Add feta and gently toss.
Notes
To store carrots up to several weeks, pack them in a zip-close plastic bag with a few holes poked in it and store in the crisper drawer of your refrigerator.
