Spiced-Mustard Tofu

1 Tbsp, hot and spicy

red pepper flakes

¼ tsp

dehydrated onion flakes

1 tsp

sweet red pepper(s)

½ cup(s)

fresh spinach

2 cup(s)

fresh lemon juice

1 Tbsp

uncooked acorn squash

¾ medium, cooked

regular butter

1 tsp


Marinate tofu with mustard and red pepper flakes. Heat a nonstick skillet coated with cooking spray. Add tofu, onion flakes, pepper and spinach. Drizzle with lemon juice and season to taste. Sauté until spinach is wilted. Serve tofu and sautéed vegetables with squash and butter.
