Peach Salsa and Veggie Burrito

Preheat oven to 350°F. Heat oil in nonstick pan. Sauté onion, peppers, and mushrooms until tender. Place onion, peppers and mushrooms down center of tortillas. Top with salsa and cheese. Roll tortillas and place seam-side down on baking sheet. Bake until crispy. Serve with vegetable sticks and remaining salsa.
