Among all the exciting changes that came with the WW Freestyle™ program, the one that tickles me the most is that eggs are now a zero Points® food. My favorite way to eat them is also the simplest: hard-boiled. I use my Instant Pot pressure cooker to make a dozen at a time, putting the eggs on a trivet with one cup of water underneath, and using the formula 5-5-5 (five minutes high pressure, five minutes natural release, five minutes in an ice bath). The shells slip right off. I’ve boiled hundreds of dozens of eggs in my life, and it’s never been as easy as this. I keep them in the fridge to grab as needed. That zero Points boost of protein will get me through to my next nourishment.
The recipe builder is full of great ideas for eating eggs all day long:
Mexican Scrambled Egg Sandwiches (2 SmartPoints value) makes a great on-the-go morning meal.
Veggie Lover’s Omelet (1 SmartPoints value) is the perfect way to fuel your day. Add more vegetables—or heck, add a third egg—if you’re looking for something super-filling.
Warm Kale Salad with Onion, Mushrooms & Egg (2 SmartPoints value) makes a lovely light repast, or an exceptionally filling snack.
Italian Pepper and Egg Sandwich (3 SmartPoints value) would be great paired with a small salad—add zero Points beans and you’ll feel full all afternoon.
Avocado and Egg Crisp (3 SmartPoints value) turns my beloved hard-boiled egg into a mini-meal.
Curried Deviled Eggs (0 SmartPoints value) uses another new zero Points food, plain fat-free yogurt, to turn this into a nibble fancy enough for company.
Shakshouka (1 SmartPoints value) is a Middle Eastern dish, eggs baked in a spiced-up tomato stew. It’s crazy-good.
Baked Eggs with Delicata Squash, Spinach, and Feta (2 SmartPoints value) makes a savory, salty, satisfying main dish.
