Tofu and Four Vegetable Stir-Fry

Ingredients

  • 1/2 cup(s) sweet red pepper(s) (sliced)
  • 1/2 cup(s) uncooked carrot(s) (sliced)
  • 1/2 cup(s) uncooked sugar snap peas (halved)
  • 1/2 cup(s) canned water chestnut(s) (sliced)
  • 1 cup(s) firm tofu (cubed)
  • 2 spray(s) cooking spray
  • 2 Tbsp uncooked scallion(s) (chopped)
  • 1/8 tsp minced garlic (or to taste)
  • 1/2 tsp low sodium soy sauce (or to taste)
  • 1 tsp sesame oil
  • 1/2 cup(s) cooked brown rice

Instructions
Stir-fry peppers, carrots, sugar snap peas, water chestnuts and tofu with cooking spray, scallions and garlic; sprinkle with soy sauce and sesame oil. Enjoy with rice.
