Thanksgiving ushered in Feasting Season: five weeks of holiday parties, cookie trays, lavish food baskets in the office, Christmas dinner, Hanukkah latke-fests, and, finally, New Year’s Eve celebrations. I find it really stressful to remain vigilant about what I’m eating. I definitely overdo it on occasion. Which is why soup saves my holidays. See, a bowl of vegetable-filled, broth-based goodness generally costs a lower SmartPoints® value than a meal on a plate. The Weight Watchers recipe database even offers some options that don’t have any SmartPoints value at all!
This time of year, I put soup on the menu regularly, and I always make a huge amount, enough to have leftovers for lunch and snacks. These are some of my faves:
You can’t beat a thick, creamy bowl of Butternut Squash Soup for ZERO SmartPoints value. And it’s ready in just 15 minutes!
Also 0 SmartPoints value: This veg-and-herb-packed Italian-Inspired Vegetable Soup, which is so easy you literally dump everything into a pot and simmer it. Keep this on hand for between-meal hunger pangs.
If you’ve got 18 minutes and some leftover cooked chicken breast, Chicken and Orzo Soup with Fennel brings a bright, lemony bowl to the table for 3 SmartPoints value.
Mushroom-Barley Soup, a dish I grew up on, fills me up for just 4 SmartPoints value a bowl. I always make a double-batch of this one.
Chicken Tortilla Soup makes a lovely, light lunch with only 2 SmartPoints value per serving.
Asian noodle soups are ready quickly and because they’re so brothy, remain generally low in SmartPoints value. With 4 SmartPoints value per serving, this Spicy Thai Beef-Noodle Soup is a perfect example.
Making soup in a slow cooker means you come home to amazing smells and dinner that’s ready to go. This Slow Cooker Lentil Soup is super-hearty for 5 SmartPoints value per serving.
Another slow cooker option, this time with a spicy zing: Jerk Turkey Slow Cooker Soup. I would be absolutely delighted to come home to this, and each bowl has just 3 SmartPoints value.
