Roasted Chicken, Quinoa and Vegetable Salad

Ingredients

  • 1 1/2 cup(s) mixed greens
  • 3 oz cooked skinless boneless chicken breast(s) (sliced)
  • 1/2 cup(s) cooked quinoa
  • 1/4 cup(s) yellow pepper(s) (chopped)
  • 1/4 cup(s) cucumber(s) (chopped)
  • 1/2 medium pear(s) (red, sliced)
  • 2 Tbsp semisoft goat cheese (crumbled)
  • 2 tsp vinegar
  • 1 tsp olive oil
  • 1 pinch table salt (or to taste)
  • 1 pinch black pepper (or to taste)

Instructions
Arrange chicken, quinoa, greens, yellow pepper, cucumber, pear and cheese on a plate; when ready to eat, toss with vinegar, oil, salt and pepper.
