Recipes for a Matzo-Pizza Holiday
By Debbie Koenig
We’re a matzo-pizza family: I’m Jewish, and my husband is Catholic. So this weekend, we’ll be having Passover Seders and Easter fun. Because Passover requires a week of dietary restrictions (mostly avoiding leavened products, but I always feel strange eating never-ever-kosher foods like bacon, too), I had to dig up recipes that could work for both. Good thing the database has plenty!
Start things off with Umami Bombs (Savory Stuffed Mushrooms) for 0 SmartPoints® value per serving.
With spring-centric artichokes, Roasted Greek-Style Chicken and Vegetables (2 SmartPoints value/serving) would be perfect for a Passover or Easter dinner.
Already have a killer roast chicken recipe? It’ll taste downright magical when it’s served with Fresh Citrus Herb Sauce (1 SmartPoints value/serving).
If you’d rather have red meat, Roasted Sirloin Beef (2 SmartPoints value/serving) is super-simple, yet sophisticated.
Roasted Fingerling Potatoes (2 SmartPoints value/serving) goes nicely with almost any main dish.
Fennel is lovely this time of year, and Roasted Fennel with Orange Glaze (2 SmartPoints value/serving) feels festive to me.
This bright salad, Orange Salad with Cinnamon, Mint, and Orange Flower Water, (1 SmartPoints value/serving) would make a lovely, sunny side.
Who doesn’t want to end a holiday meal with Flourless Chocolate Cake? (7 SmartPoints value/serving).
Happy holidays, everyone!
