4 Great Ideas for Baked Egg Muffins

Because eggs are now 0 SmartPoints and we need to celebrate this

Break an egg into each of 12 muffin cups and add different fillings to each, then scramble with a fork. 

​Here are some ideas:

  • 2 Tbsp chopped jarred red peppers (packed in water) and up to 1 1/2 Tbsp reduced fat goat cheese (1 SP) 
  • 2 -3 Tbsp chopped broccoli and 2 Tbsp shredded low-fat cheddar (1 SP) 
  • 4 sliced mushrooms and 4 halved cherry tomatoes (or whatever quantity works in the cup!)
  • 2 - 3 slices chopped Canadian bacon (1 SP) and 1-2 Tbsp sliced scallions

Bake at 350 degrees for 25 minutes and enjoy!
