Wave your flags and grab your sparklers, because a holiday weekend is a-coming. We’ll be up at the house for four glorious days, complete with small-town parades, fireworks, and lots of grilling. My menu will involve many, if not all, of these irresistible dishes:
We haven’t tried grilling fish yet on our fancy new gas grill, but this weekend seems like a good time to start. Grilled Salmon with Caper Chimichurri (8 SmartPoints value/serving) is a recipe I developed for Weight Watchers Magazine, and I can’t wait to make it again.
Something a little tropical makes sense for a summer holiday. Mojo-Marinated Chicken and Vegetable Kebabs (7 SmartPoints value/serving) fits the bill.
For a more traditional Fourth, I’d go burgers and dogs all the way. Cheeseburgers with Grilled Onions for only 7 SmartPoints value/serving? Yes, indeed.
And don’t forget the dogs! The toppings on a Chicago-Style Hot Dog (5 SmartPoints value/serving) won’t thrill my picky eater, but the dog itself definitely will.
