Pasta Primavera with Arugula Salad

Ingredients

  • 1 cup(s) cooked pasta (farfalle variety)
  • 1 cup(s) cooked sweet red pepper strips (or mixed peppers)
  • 2 spray(s) cooking spray
  • 1 pinch kosher salt
  • 1 pinch black pepper
  • 1 Tbsp basil
  • 2 Tbsp shredded parmesan cheese
  • 1 cup(s) arugula (baby variety)
  • 1/3 cup(s) fresh mushroom(s) (sliced)
  • 1/3 cup(s) uncooked shallot(s) (minced)
  • 1/3 cup(s) grape tomatoes
  • 2 Tbsp reduced fat store-bought Italian dressing

Instructions
Top hot farfalle with roasted peppers (made with cooking spray, kosher salt and pepper); sprinkle with basil and cheese. Enjoy with arugula, mushrooms, shallots and tomatoes tossed with Italian dressing.
