Prep Time: 15 min Cook Time: 8 Serves: 6 Difficulty: Easy
2 large egg white(s), at room temperature
2 Tbsp water
1 cup(s) grated Parmesan cheese, preferably Parmigiano-Reggiano (about 3 1/2 oz)
1 tsp black pepper, freshly ground, or to taste
12 oz uncooked string beans, trimmed (about 60)
- Preheat oven to 425°F. Line a large rimmed baking sheet with a silicone baking mat or parchment paper.
- In a shallow bowl, whisk together egg whites with water until foamy. In another shallow bowl, combine cheese and pepper.
- Dip each string bean into egg white mixture; gently shake off any excess. Next, dip in cheese mixture and turn to coat; place on prepared pan and repeat with remaining ingredients (make sure fries do not touch or overlap on pan, and rewhip egg white mixture a few times as you prep the fries).
- Bake until cheese has melted and browned a little, about 8 minutes. Transfer pan to a wire rack and cool for a few minutes.
- Serving size: 10 fries
