1⁄2 pound(s) uncooked whole wheat pasta, linguini shape
8 oz grape tomatoes, halved
1 medium uncooked red onion(s), sliced
3 clove(s) garlic clove(s), thinly sliced
2 sprig(s) fresh thyme
4 tsp olive oil
1 tsp table salt
1⁄4 tsp red pepper flakes
3 1⁄2 cup(s) water
6 cup(s) uncooked kale, baby variety
2 Tbsp soft-type goat cheese, crumbled
2 Tbsp grated Pecorino cheese
- Combine pasta, tomatoes, onion, garlic, thyme, oil, salt, red pepper flakes and water in a large 12-inch deep skillet; bring to boil. Cook, stirring and turning pasta frequently with tongs, 6 minutes.
- Add kale, one third at a time, stirring until each batch is wilted. Boil, stirring, until pasta is al dente and cooking liquid thickens, about 3 minutes. Remove pan from heat; remove and discard thyme. Stir in goat cheese and pecorino until cheese in incorporated; serve.
