Make One-Pot Pasta
By Debbie Koenig
If you haven’t tried cooking your noodles, vegetables, and seasoning in one pot, prepare to have your mind blown. For the September/October issue of Weight Watchers Magazine, my “Master the…” column focused on one-pot pasta. The recipe I created for it, One-Pot Butternut Mac and Cheese, takes advantage of the starch that gathers in the pot to make a rich, creamy bowl of satisfaction for just 7 SmartPoints® value per serving. (That’s literally half the value in a traditional mac & cheese.) And you can use the technique outlined in the recipe to make your own combinations — the story also includes a “Mix-‘N’-Match” chart showing how and when to use your favorite ingredients.
I don’t use this method every time I make pasta. But when I’m pressed for time and I want something low-key, low-effort, and low-mess, I can’t think of a better way to get dinner on the table.
But wait, that’s not all! The Recipe Database offers a half-dozen more recipes for one-pot pasta, each with its own flavor combinations:
One-Pot Curry Noodles (7 SmartPoints value/serving)
One-Pot Bucatini All’Amatricianna with Artichokes (10 SmartPoints value/serving)
One-Pot Orecchiette with Sausage, Fennel, and Butternut Squash (8 SmartPoints value/serving)
One-Pot Penne with Broccoli Rabe and Sausage (10 SmartPoints value/serving)
One Pot Linguine with Winter Greens (8 SmartPoints value/serving)
One-Pot Pasta with Cauliflower, Lemon, and Capers (7 SmartPoints value/serving)
Give the one-pot method a shot. You won’t be sorry!
