If you haven’t tried cooking your noodles, vegetables, and seasoning in one pot, prepare to have your mind blown. For the September/October issue of Weight Watchers Magazine, my “Master the…” column focused on one-pot pasta. The recipe I created for it, One-Pot Butternut Mac and Cheese, takes advantage of the starch that gathers in the pot to make a rich, creamy bowl of satisfaction for just 7 SmartPoints® value per serving. (That’s literally half the value in a traditional mac & cheese.) And you can use the technique outlined in the recipe to make your own combinations — the story also includes a “Mix-‘N’-Match” chart showing how and when to use your favorite ingredients.
